  Salt or a sodium chloride *(NaCl)* is a dietary mineral essential for the existence of animal life. Also known by the names of common salt, table salt, or halite, this chemical compound is responsible for the salinity of the ocean and of the extracellular fluid of many multicellular organisms. It is used as a condiment and a food preservative but doesn't contain calories, proteins, or carbohydrates. Approximately 0.3933 grams of sodium, and 0.6067 grams of chlorine is present in one gram of sodium chloride.

Salt is a necessary constituent of the human body. It is the only mineral for which we have an innate craving. The sodium and chloride elements of the salt helps the kidneys to regulate the body's fluid levels, besides maintaining the life-sustaining balance of acids and bases.

NAMAK (NAMAK = salt in the Persian language) is free (not registered) association of geologists and speleologists who are cooperating on exploration and research of the unique salt caves and salt karst in Iran. This research is jointly held by Charles University in Prague, Czech Academy of Sciences and Shiraz University with a contribution of persons from the private sphere.

Our team studies Iranian salt karst since 1998. During existence of this project ca 16 salt diapirs were visited (by the year 2010). The most exciting finding was made on the NAMAKdan salt diapir (Qeshm Island, Persian Gulf). During the January 2006 expedition, the Big Ponor Cave was connected with the Cave of Tří Naháčů (Cave of Three Naked Man). The resulting world’s longest salt cave was named 3N Cave (Ghar-e 3N in Farsi) and altogether with newly mapped parts reaches the total length of 6,580 m. It is some 900 m longer than Malham Cave (5,685 m, Mt. Sedom, Israel) now being the second. More information about the 3N Cave in English is presented by Bruthans et al. (2006) and in French by Filippi et al. (2006).

The 3N Cave is unique not only by its length (6580 m) and width of passage (up to 40 m) but also by its origin and development. Cave passage changes its position in time. During rainstorms the stream cuts the cave wall on one side and at the same time fills the free space by the sediments on the other side. The cave behaves as a river bed of a meandering river in the flood plain. Real width of the passages is thus not known and as suggest indicia from the upper part of the cave, it can reach higher tens or lower hundreds of meters!

Obtained results of the NAMAK project are continuously published in scientific and popular journals and in audio-visual media. Members of the NAMAK team asisted with the movie making by the Czech TV, Iranian TV and BBC/National Geographic Chanell. Namely due to the discovery and documentation of the 3N Cave by the NAMAK team, part of the Qeshm Island was pronounced as National geopark and in 2006 it was registered by the UNESCO Network of Geoparks.
 
Climate
The climate in salt karst is arid. The annual average precipitation varies from 50 to 350 mm. The annual average temperature is 27 °C, in summer temperature can reach 50 °C. During our expeditions (usually January to May, temperatures varied between 15 and 40 °C on surface and between 20 and ca 30 °C in caves. The humidity on surface and in caves varied from 50 to 98 % and from 52 to 82 % respectively. Strong precipitation events occur sporadically every several years, usually during the winter season. These sudden rains cause flash floods, which are the main danger for explorers in the cave. For the rest of the time the cave floor is either dry and covered by salt crusts, or traversed by small streams of saturated brine.
 
Various Salts of the Earth
There are a number of natural salts which differ on their mineral compositions and flavour. The following are the major varieties of the natural salt:

 Table Salt: A standard white crystalline form of especially sodium chloride condiment salt used to season food at the table
 Iodized Salt: Table salt (sodium chloride) fortified with the mineral potassium iodide, a source of the essential nutrient iodine
 Sea Salt: Also termed as 'Dead Sea Salts', they are produced by evaporation of sea water either by solar or kiln drying. For centuries, they have been used for their therapeutic benefits. Dead Sea salts are known for their high mineral content. Fleur de sel, "flower of salt," is one of the best known sea salts, harvested in France and renowned for its delicate flakes and fine flavor
 Kosher Salt: A variety of edible salt, it consists of the chemical compound sodium chloride but does not contain additives. Many cooks prefer Kosher Salt to other salts for its superior flavor, larger grains and coarse texture
 Seasoned Salt: Table salt flavored with ingredients like vegetable extracts, spices, herbs, other flavourings, and sometimes monosodium glutamate (MSG)
 Rock Salt: A salt derived from the huge seams of impacted salt that have formed below the dried-out, underground saline lakes of prehistoric times. This grayish rock salt is often used for freezing ice cream and melting icy sidewalks.

Needless to say that salt is an essential element for the existence of animal life. Life itself would be impossible without it, since the human body requires salt in order to function properly. Nutritionists recommend about 3 to 8 grams of salt a day in an adult diet. Lets examine the chemical composition of a salt. In fact salt is a composition of many natural minerals and every element has its own medicinal properties.

Uses & Benefits
The multiple chemical and physical properties of salt make possible 14,000 known uses. From the days of the cave men, humans have discovered ingenious means to use salt to enhance the quality of our lives. So valuable is this common mineral that wars have been waged and revolutions fought for access to salt. Its largest use is largely invisible to the public: about 40% of salt worldwide is used as the raw material that chemical companies transform into chlorine and soda ash, the foundations of inorganic chemistry. Salt is a processing aid in innumerable industries and the means by which animal nutrition experts ensure the health and productivity of livestock and poultry. We are all familiar with the salt shaker on the table in most of our homes. We less often think of the salt we use to regenerate our water softeners to protect the pipes and appliances in our homes. And seasonally, many of us give thanks for the salt that road maintenance crews apply to keep our cars, trucks and school buses safely on snowy winter roads.
 
Black Salt
Indian Kala Namak is considered a cooling spice in ayurvedic medicine and is used as a laxative and digestive aid. It is also believed to relieve intestinal gas and heartburn. Kala Namak is appreciated by vegans in dishes that mimic the taste of eggs. It is used, for example, to spice tofu to mimic an egg salad. It is also regularly used in small quantities in chutneys, raitas, pickles and many other savory Indian snacks, adding a very different flavor than just using regular salt. Try sprinkling it on fresh cut fruit such as apples and bananas for a delicious treat. Can also be used to replace sea salt or table salt.

Refined salt
Refined salt, which is most widely used presently, is mainly sodium chloride. Food grade salt accounts for only a small part of salt production in industrialised countries (3% in Europe) although worldwide, food uses account for 17.5% of salt production. The majority is sold for industrial use. Salt has great commercial value because it is a necessary ingredient in the manufacturing of many things. A few common examples include: the production of pulp and paper, setting dyes in textiles and fabrics, and the making of soaps and detergents.

The manufacture and use of salt is one of the oldest chemical industries. Salt can be obtained by evaporation of sea water, usually in shallow basins warmed by sunlight; salt so obtained was formerly called bay salt, and is now often called sea salt or solar salt. Rock salt deposits are formed by the evaporation of ancient salt lakes, and may be mined conventionally or through the injection of water. Injected water dissolves the salt, and the brine solution can be pumped to the surface where the salt is collected.

After the raw salt is obtained, it is refined to purify it and improve its storage and handling characteristics. Purification usually involves recrystallization. In recrystallization, a brine solution is treated with chemicals that precipitate most impurities (largely magnesium and calcium salts). Multiple stages of evaporation are then used to collect pure sodium chloride crystals, which are kiln-dried.
